Adjust Servings:
Fajita seasoning
1 tbsp cornflour
2 tsp chilli powder
1 tsp salt
1 tsp smoked paprika
1 tsp sugar
1/2 tsp onion powder
1/2 tsp garlic powder
1/2 tsp cayenne pepper
1/2 tsp ground cumin
6 pieces (150g each) white fish fillets
2 tbsp vegetable oil
handful fresh corriander rough chopped
to serve fresh lime

Tex-Mex Fish Tacos with guacamole

Quick and easy Tex-Mex tacos

For the fajita seasoning combine all the ingredients and mix well

Using the seasoning coat the fish fillets on both sides and set aside, if you have any leftover fajita seasoning keep in an air tight jar

Heat the oil in a shallow fry pan and fry the fish fillets for 3-4 minutes on each side once cooked flake the fillets

Fill the tacos with slaw, add the flaked fish, squeeze a little lime onto the fish and top with the guacamole and drizzle a little sour cream and top with fresh chopped coriander.
