2 ripe avocado
1/4 cup red onion finely diced
1-2 red chilli finely chopped
1/2 Vine tomatoes fine diced
1/4 cup fresh corriander rough chopped
generous squeeze lime juice
to season salt and pepper
I have tried so many guacamole recipes, after experimenting with the ingredients I finally cracked it and I will never buy ready made ever again!
Cut the avocados in half and carefully remove the seed, score the flesh with a blunt knife and scoop out with a spoon into a mixing bowl and mash lightly for a chunky guacamole or mash a little more for a smoother texture.
Fine dice the red onion, chop the chilli finely, cut the tomato in half and remove the pulp and seeds then small diced the tomato and rough chop the coriander add all these to the bowl, squeeze the lime juice over the mixture and mix, season with salt and fresh ground pepper to suit your taste. Chill before use.
Guacamole can be used with many dishes such as fajitas, tacos, enchiladas or even just as a dip with tortilla chips or nachos.
