Carb free stir fry


    A vibrant and healthy stir fry full of flavour.

    • For the sauce

    • Vegetables



    Combine all the sauce ingredients in a bowl, mix well and put to one side.

    Crack your eggs into a bowl and beat, put to the one side.

    Prepare all your vegetables and your meat of choice.

    Heat half the sesame oil in a frying pan or wok, add your choice of meat, when seared add a 1/2 tbsp of the sauce and stir, remove from pan and set aside.

    Using the same pan, heat the vegetable oil add the beaten eggs and scramble, cook to your liking and set aside.

    Now heat the remaining sesame oil till fragrant (not too hot, the garlic and ginger will spit out of the pan) add the garlic and ginger and fry for a 1 minute.

    Add the broccoli and peppers fry until slightly tender, add the remaining vegetables except the 2 inch cut spring onions, stir fry on a medium high heat until the vegetables are cooked. (your broccoli and peppers should still have a little crunch to them)

    Add the curry powder and mix well, add the meat and stir, add the remaining sauce and stir quickly and throughly.

    Add the scrambled eggs and the remaining spring onions and stir for about a minute and serve.

    You can swap out any of the vegetables for alternatives or even add in more.
