Bubble and squeak is traditionally made using leftovers from a traditional English roast dinner to avoid wastage but it can be made using fresh ingredients although personally I prefer the leftovers as I feel it tastes better and I hate throwing good food away.
The dish is made from mashed potatoes as the main ingredient with cabbage, broccoli, cauliflower mashed in to form the bubble and squeak but I add a few extra ingredients to make it slightly more interesting.
The potato can be either from leftover mash or from baked or microwaved potatoes with the flesh scooped out and mashed once cool, the skins can be frozen to make potato skin appetizers at a later date. Once you have your mash finely shred the cooked cabbage if not already done and mash the broccoli or cauliflower or both and add to the potato. Thinly slice the spring onion and add to the potato mix, dice the bacon into small pieces and also add to the potato, add in the garlic powder and the hot smoked paprika and mix well, add the butter and olive oil and some salt if the potatoes were freshly done and again mix to combine. Preheat the oven to 180 and while the oven is warming up oil your dish or a muffin tray and fill with the potato mixture, place into the middle of the preheated oven and cook for 45 minutes or until the bubble and squeak has nicely browned.
